Soup Season is Officially On!

We made some great Minestra Toscana yesterday, and we took advantage of the beautiful day to sup outside at the Poptent picnic table. Here’s what went into it:

  1. Cup olive oil
  2. 2 yellow onions
  3. 4 carrots (peeled)
  4. 2 zucchini (peeled)
  5. 2 red peppers (peeled)
  6. A handful or two of spinach
  7. 3 cups white wine
  8. 10 cups vegetable stock

Toss some cayenne pepper in this baby and garnish with parmesan cheese and get ready to rock.

It’s that busy time at the end of the month again, so today’s lunch was a quick garlic bread (inspired by me own mum).
Sandwich roll, sliced in half
Olive oil
Basil
Chopped garlic
Taragon
Pop that in the toaster oven and viola!

Yummy, yummy, pumpernickel bagel sandwiches. Such a simple, but delicious lunch.
Here’s the breakdown:
Pumpernickel bagel
Garlic Hummus
Lettuce
Tomato
Avocado
Cucumber slices
Sprouts
Cheddar cheese
AND RUFFLY POTATO CHIPS!

Still playing catch up with our lunch menu from this week. On Tuesday we had some wonderful little pita pizzas replete with fauxsage, fake cheese, and veggies.
Supreme Pita Pizzas:
Fauxsage
Pitas
Fake cheese (or mozzarella)
Spinach
Artichoke
Chopped green peppers
Red Onions
Bam my friends… bam indeed.

Guess who was rushing around last minute, with no real idea as to what we should make for lunch on Monday… You give up? Don’t worry, I know it was a tricky one. The answer was: US!
Thanks to Whole Foods and Liz’s ingenuity, we came up with some simple yet bangin’ wraps for lunch.
Simple yet Bangin’ Wraps
Tortillas (we had an assortment left over, whole wheat, spinach, whatever works)
Tofurky
Strips of green pepper
Slices of tomato
Spinach
A nice thick layer of hummus
What’d I tell you? Bangin’.
